Some days just require a full English breakfast to get going, and you can’t beat a generous helping of hash browns. And so, this recipe is super easy and quick to make! Also, I particularly like this recipe because it’s a fun and delicious treat for when you’re tired of mash, jacket, or roast potatoes.

Hashing Out Hash Browns

Don’t worry if you don’t have a waffle maker to hand! For instance, you could always opt for hash brown pancakes or patties. Just lightly frying heaped spoonfuls of the mixture in a saucepan with a little bit of oil. If you’re making waffley hash browns, then this recipe serves 3 people as a main meal, or 6 people as a side.

Vegan Hash Browns

Equipment

  • Waffle Maker or Saucepan
  • Grater
  • Knife
  • Chopping Board
  • Mixing Bowl

Ingredients

  • 5 Medium Potatoes e.g. Maris Piper
  • 3 Vegan Egg Replacer or 9 tbsp Aqua Faba
  • 170-250 g Plain or Rice Flour (I only need 170g)
  • ½ Red Bell Pepper Diced
  • 1 Medium Onion Chopped
  • 3 Spring Onions (Optional), Chopped
  • ½ Tsp Turmeric Optional
  • Salt and Pepper To Taste
  • Oil (to grease the waffle maker or for the saucepan)

Instructions

  • Peel and grate the potatoes carefully and place in a large mixing bowl.
  • Use kitchen paper to squeeze out some moisture from the grated potatoes.
  • Now add the diced red pepper, onion, spring onions (if using), ground turmeric (if using) and seasoning.
  • Pour in the vegan egg replacer to the mixing bowl and stir to combine.
  • Add about half the flour into the bowl and mix well before stirring in the remaining flour. The consistency should look something like this:
  • Lightly grease and preheat the waffle iron (if using) or add oil to your saucepan.
  • Add two heaped spoonfuls of the waffle mixture to the preheated waffle iron and cook according to machine instructions.
  • If cooking in a saucepan, add two heaped spoonfuls into the saucepan and cook for about 4-5 minutes per side.
  • This mixture can make up to a stack of 6 hash brown waffles, enjoy!
