Instructions
Peel and grate the potatoes carefully and place in a large mixing bowl.
Use kitchen paper to squeeze out some moisture from the grated potatoes.
Now add the diced red pepper, onion, spring onions (if using), ground turmeric (if using) and seasoning.
Pour in the vegan egg replacer to the mixing bowl and stir to combine.
Add about half the flour into the bowl and mix well before stirring in the remaining flour. The consistency should look something like this:
Lightly grease and preheat the waffle iron (if using) or add oil to your saucepan.
Add two heaped spoonfuls of the waffle mixture to the preheated waffle iron and cook according to machine instructions.
If cooking in a saucepan, add two heaped spoonfuls into the saucepan and cook for about 4-5 minutes per side.
This mixture can make up to a stack of 6 hash brown waffles, enjoy!
