What’s so great about apples?

You might think it odd to have apples (or any fruit for that matter) in a soup but let me explain why! Apples pair amazingly well with the ensemble of vegetables in this soup! Moreover, apples are also chock-full of powerful antioxidants and essential nutrients.

There’s a reason that we were recommended to eat an apple a day as children! One medium apple (80g) counts as one portion of your 5 a day. The majority of their nutrients can be found in the skin, in particular fibre, that is beneficial for your gut health.** On average, one medium apple contains: 95 calories, 25g carbs, 4g fibre, 14% Vitamin C, 6% Potassium and 5% Vitamin K.  How do you like them apples?

Vitamin C is essential for our immune system, skin maintenance and wound healing. Those of us on plant-based diets should be aware  that vitamin C assists our bodies in absorbing iron. This is particularly helpful considering how much harder it is to absorb iron from plant-based sources than animal products.

Vitamin K is another crucial vitamin that is provided by our 5 A Day soup! An adequate intake of vitamin K allows our bodies to produce a protein called prothrombin. This protein is essential for our blood and bone health. Consequently, if you ever get a paper cut, vitamin K helps the blood to clot and form a scab. This process therefore allows for the wound to heal over time.

There are two types of vitamin K: K1 and K2. Leafy greens are the main source of vitamin K1 which our body converts to vitamin K2. You can also get the latter from fermented foods like sauerkraut or natto. Small amounts are also present in meat, dairy and eggs. Vegans and vegetarians can be prone to lacking in vitamin K, but eating our greens ensures that our bodies can convert vitamin K1 to the much-needed K2.

Parsnips also contain soluble and insoluble fibre that aid in the digestive process and in regulating our blood sugar levels, making us feel fuller for longer. Like many of its rooty cousins, parsnips are rich in antioxidants that combat the build-up of harmful free radicals in the body which have been linked to ageing and some cancers.
