I hope you’ve got a sweet tooth! We’re kicking off kids’ school meals week with a sugary, syrupy golden delight! My school used to call this Sunshine Tart and you can certainly see the appeal. I know some of us might not have the best memories when it comes to school dinners. But, I promise, after this week, you’ll be floating on a cloud of nostalgia!

What can I expect?

Now, I can’t claim that this recipe has any particular nutritional benefits, but sometimes a dose of sentimentality can do use good in other ways! So, today is the perfect time to reach for those oven gloves and get any children involved too! The combination of crispy cornflakes coated in a tantalizingly sweet glaze on a bed of perfectly baked pastry is a treat for the senses! I bet you can just hear that *CRUNCH* when tucking into a slice!

If you’re in need of cooking up an indulgent sweet treat with minimal ingredients, then we’ve definitely got you covered! This is such a simple recipe and makes use of any stale cornflakes that might have been forsaken as a sad and soggy breakfast meal! I have included coconut milk powder in this recipe, but it is indeed an optional extra.

The golden syrup really holds this tart together and is just so moreish without being sickly sweet. Who am I kidding, this tart is sweetness itself, but not so sweet that you’ll probably still be asking for a second helping! The golden syrupy layers are bound to catch the eye and brighten up any afternoon. Whether you’re a fan of frosted flakes or plain old cornflakes, I’m sure you’ll enjoy making and eating this wonderfully yummy treat.

Sunshine Tart

Equipment

  • Baking Tray x2
  • Baking Paper, two sheets
  • Rolling Pin
  • Small saucepan
  • Spatula, or similar
  • Large Mixing Bowl
  • Oven Gloves
  • Tablespoon

Ingredients

  • 320 g Shortcrust Pastry
  • Plain Flour to dust
  • 40 g Margarine
  • 120 g Golden Syrup plus 2 tbsp
  • 40 g (Coconut) Milk Powder (optional)
  • 20 g Light Brown Sugar
  • 150 g Cornflakes

Instructions

  • To begin, pre-heat the oven to 180°C/355°F.
  • Line a baking tray with baking paper and set aside.
  • Dust your work surface with flour. Carefully roll out the shortcrust pastry into a large rectangular shape with a rolling pin.
  • Gently fold over the outer edges to make a more uniform rectangle, a bit like how you would make pizza crust!
  • Lay out the pastry on the lined baking tray. Cover the pastry with another sheet of baking paper and place the second baking tray on top. This is an easy way to ‘blind bake’ the pastry to stop the dough from forming any air pockets and giving us a strong foundation for our tart!
  • Bake the pastry in the oven for 15 minutes.
  • In a small saucepan, add the margarine, golden syrup, coconut milk powder, and sugar.
  • Melt the mixture over low heat and whisk together until fully combined.
  • Place the cornflakes in a large bowl and pour over the mixture. Stir thoroughly to evenly coat each cornflake. Set aside.
  • Be sure to wear oven gloves for this step! Remove the pastry from the oven and carefully remove the top tray and baking paper.
  • Spread two tablespoons of golden syrup over the pastry evenly.
  • Top the pastry with cornflakes and use the back of a spatula or clean hands to spread the mixture evenly.
  • Place back in the oven for 10 minutes, or until the tart is lightly toasted.
  • Remove from the oven and allow to cool before serving!
  • To serve, carefully cut into slices and listen out for that glorious crunch! Enjoy!
