As promised, we are revealing our BRAND NEW range of soups: RESCUED VEG!

This is the first in our seasonal range of soups using vegetables that have been turned away from supermarkets for their shape. But we think they are deserving of love just like any other vegetable!

The flavour is: Warming Carrot with a Hint of Chilli & Lime! The taste is a little smoky and spicy with a sweetness from the carrots and refreshing twist of coriander & lime!

Every pot  contains: Carrots, Onions, Lime Juice, Chipotle, Curry Powder, Coriander, Paprika, Agave Nectar, Oil, Vegetable Stock + Water, Salt & Pepper.

Per ½ pot of Rescued Veg, you’ll get: 171% Vitamin A, 16% Vitamin B6, 20% Folate & 19% Potassium!

As always with our soups, Rescued Veg is entirely plant-based, gluten & dairy-free. We do not add sugars or anything artificial.  You’ll notice that the flavour is a bit spicy and curried with a cooling note of lime and coriander.

Carrots are such a common vegetable that it’s easy to forget the multitude of benefits contained within! Carrots are actually chock-full of antioxidants!

Antioxidants are a type of nutrient that are found in plant-based foods. They work by helping the body to remove unstable molecules (free radicals). This is important because they can cause cell damage if too many accumulate in the body. Your body naturally removes free radicals, but your diet can help to aid this process.

So, can carrots really help you see in the dark or was it just a trick your parents used to get you to eat your vegetables?

Well, carrots are naturally high in Vitamin A – our Rescued Veg soup contains 171% Vitamin A per portion! Notably, carrots also contain lutein and zeaxanthin. It is suggested that these two antioxidants might help to prevent macular degeneration and cataracts. While carrots alone won’t help improve your eyesight, they can contribute to a healthy overall diet and a natural source of Vitamin A.

Moreover, carrots contain alpha and beta carotene, which gives carrots their orange colour. The body absorbs beta carotene through the intestines and converts it into Vitamin A in digestion.

The high fibre in carrots are great for digestive and gut health too. The American Heart Association suggests eating potassium-rich carrots could help reduce the risk of high blood pressure. That’s because potassium helps to relax blood vessels, lowering the risk of high blood pressure and cardiovascular issues.

According to WRAP, food waste within UK households, food service and food manufacturing is around 9.5 million tonnes – 70% of that is edible while 30% is considered the inedible parts of food. That equals about £19 billion per year.

Alongside our regular Food Waste Friday segment, our Rescued Veg soup fits right in as way to help reduce the waste in food manufacturing. We are making our Rescued Veg soup a seasonal range so we can keep using wonky veg throughout the year.
