11 Things to do with Sweet Potatoes

The pro list for sweet potatoes is long and sweet. They’re full of antioxidants, vitamins (A in particular) and they’re loaded with carotenoids. In addition to this, they’re also quick to prepare and are absolutely delicious. Should you have them in your diets? You bet your sweet patootie!

All of these reasons make sweet potatoes a favourite at Soupologie HQ, making them our go-to for office hunger emergencies (although yes we admit – sometimes we go for something a little naughtier when hanger strikes).

Today is National Sweet Potato day and, as its effects on the stomach tend to be a little friendlier than those induced by Pancake Day, we thought we’d compile a list of 10 things you can do with the wonderful root vegetable.

11 Ways to Enjoy Sweet Potatoes

  1. Make a soup with it (duh). Why not try our Sweet Potato Soup with Pistachio, Orange and Mint Pesto

    2. Make sweet potato burgers (our favourite Sweet Potato Black Bean Burger here, by the talented Minimalist Baker)

3. Make sweet potato wedges for those burgers (try Deliciously Ella’s recipe here). You can sub in spices like cayenne, turmeric, thyme, cinnamon and chili depending on personal preference.

6. Make a sweet (potato) roast. Cut your sweet potatoes into 1-2 inch slices, and mix in a bit of olive oil. Roast until tender and lightly browned and sprinkle with spices like cinnamon, chili, salt and pepper.

Sweet Potato Mash!

9. Make them Vertue-ous with Shona Vertue’s Busy Girls Sweet Potato Mash (we’ve adopted the vegan, gluten-free options)

  • Ingredients: nut milk (around a quarter cup), half a teaspoon of coconut oil, 1 sweet potato and sea salt to season. 
  • Method: Roughly chop the sweep potato, wrap it into a paper towel and place in a bowl. Microwave for 6 minutes. Place the sweet potato, nut milk and coconut oil into a blender and blend to your desired consistency. [If you have more time or don’t want to use a microwave, the sweet potato can be roasted as well]
  • Options: add your favourite herbs – turmeric, garlic or oregano all go great in this recipe. To add more colour, try using purple sweet potatoes instead. 

10. Make a Sweet Jacket Potato. This super easy recipe features kidney beans and avocado. If gluten intolerant, ensure beans do not come with gluten-containing additives.
